July 14- 20 Menu

This week we received a bountiful basket and an italian pack so we have- kale, beet greens, radishes, corn, tomatoes, cauliflower, yellow squash, zucchini, eggplant, mushrooms, onions, garlic, and lots of fresh herbs. For fruit bananas, plums, blueberries, and peaches. Also I have a goal this week to eat more legumes, so you'll see lots of beans and lentils in the mix. Here's the plan-

tacos with roasted corn, pinto beans, and zucchini-radish slaw a la this recipe
kidney bean curry and indian spiced cauliflower- I'm not using the potatoes in this recipe
fajitas with all the peppers left over from our last family reunion
sauteed snow peas, beans and greens soup, and corn on the cob
Veggie Kabobs over a fire and corn on the cob
Alice Water's Ratatouille!
We're going to be roasting a whole chicken next weekend which is a big affair for us. I'm planning on using the roasting method made famous by Zuni Cafe.  This also means we will be freezing meat and using the carcass to make a large pot of chicken stock.
